Pasta Quebrada o Sableux

La pasta quebrada es una masa básica de pastelería. Se utiliza para hacer tartaletas, como base de tarta, para hacer pasteles, etc.

Ingredientes:

  • 250 gr. de harina
  • 100 gr. de azúcar
  • 120 gr. de mantequilla
  • 2 huevos

Elaboración:

Derretir ligeramente la mantequilla y hacer un volcán sobre una superficie lisa con la harina. Echar en el interior el azúcar, los huevos y la mantequilla. Amasar hasta hacer que la masa quede un poco terrosa. Añadir un poco de harina si se queda muy grasienta. Reposar durante una hora y estirar para su posterior utilización.

Cocer a 180ºC aproximadamente.
